Last weekend was our second supper club gathering, and it was once again a great success! The group includes Dawn of Vegan Moxie, Adrienne of A Big Mouthful, and Brian the Digital Mixologist, plus our spouses/significant others. Every other month, we gather at Brian’s house to make dinner together. Plus, Brian makes us cocktails. We try to educate each other: this time, Adrienne showed Brian how to dice an onion, Dawn and I shared our knowledge about quinoa and tempeh, and Brian described some techniques that went into making his award-winning cocktail, the Magnetic North.
For dinner, I made tempeh chili and quinoa, a recipe from the book David’s Pure Vegetarian Kitchen. Cubes of tempeh fill out this dish, made with black beans, corn, carrots, onions, tomatoes, and salsa. The quinoa balances the spice out a bit (for people like me with a fairly low spice tolerance) and in general it just goes really well with the chili.
Adrienne brought corn bread and homemade strawberry jam to go with, and Brian and his wife cooked up corn on the cob on the grill (some with butter, some with olive oil). For dessert, Dawn brought a boozy Italian fruit salad we all loved. It had tons of great fruit: Rainier cherries, plums, nectarines, peaches, mangoes, apples. Yum!
