My in-laws gifted me the boxed mix that made these cupcakes. I’ve had plenty of success using boxed cake mix for cupcakes (substituting milk for water and butter for oil, of course), so it was no surprise this special boxed mix turned out quite tasty. The box included dry mixes for both the cake and frosting, as well as the pearl nonpareils and cupcake “aprons” that get wrapped around the cupcakes after baking. I simply added the appropriate wet ingredients to the dry mix. The pineapple cake called for a can of crushed pineapple, which is a really yummy surprise when you bite into one of these cupcakes. The frosting seemed overly sweet to me, but everyone else who had a cupcake thought it was just right. I may have spoiled my frosting appetite by sampling too much before it was actually on the cupcakes!
